Our Employees...

Paul Gregg; Owner of 24 years

Paul is general manager, owner, and daytime chef with Ray Ecklund, main chef. He handles all the banquets and catering functions. He handles disbursements and receipts. Paul has been called a nice guy a good number of times. He is married to Cindy Gregg, an excellent elementary teacher at Washington Elementary in Crookston Minnesota. They have a 15 year old son, Matt Gregg, and a 10 year old son, Andy Gregg, who both play hockey and basketball; along with other sports. He is generous and often gives discounts to special groups, along with regular charitable donations.

Gail Hoffman

Gail is full time day bar staff of 16 years. Gail works 9-11 in the kitchen helping with preparing soups and salads for the salad bar. Gail and Paul do much of the catering. She makes homemade pasta salads like macaroni shrimp or cucumber and onion salad. Gail waits on customers in the bar from 11-5; and does most of the seasonal decorating. Gail has a fun, optimistic personality and customers like coming in to see what mischief she is up to.

Darrel Vrem

Darrel has been working in the kitchen for 16 years. The United Way Chili Cookoff awards on the dining room wall are for Darrel's Chili which is served Wednesdays and Saturdays from 11-2 and is excellent. Darrel handles food orders in the kitchen and helps with dishwashing. Darrel has a different funny shirt on everyday and his idol is Elvis.

Phyllis Denny

Phyllis has been with us for 12 years. Phyllis is an evening waitress in the dining room. Phyllis' customers know her by name and trust her for good service. Phyllis has lots of grandkids some who happen to live next door. Ask Phyllis about them and you'll get a funny story for sure!

Linda Jensen

Linda has been at the Irishman's Shanty for 7 years. She is our day dishwasher. She helps with potatoes and buns in the kitchen in the mornings. Linda drives an old Harley with black leather fringe on the handlebars and saddlebags.

Ray Ecklund

Ray is full time day chef of 6 years. Ray opens the kitchen at the crack of dawn, serves breakfast to customers, and gets everything ready for lunch. Ray makes the specials, some of which take a couple hours in the oven. Customers know that Ray's lunch specials are going to be good. Ray's Oriental Chicken Salad was a noon special that took off in popularity so Ray decided that it could be a Wednesday thing.

Bobbie Jo Goulet

Bobbie is full time day dining room staff of 3 years. Bobbie opens the building up every morning and serves breakfast in both the bar and dining room until Gail comes in. Bobbie services morning and lunch banquets and meetings. The whiteboard in the dining room with the specials frequently has creative colorings on it - done by Bobbie. She always looks great. She wakes up insanely early and does her hair really nice and her nails are always prettily done and neat. Bobbie is full of funny stories which change daily and her customers are happy to hear them.
